So, this is my absolute favorite soup.  I haven't made it all summer, well who wants soup when it's 90 degrees out, right!?  Well, last night after the rain, it was cool and breezy and it seemed like the perfect night for some soup, my fav soup of course!  This black bean soup I make from scratch and it's super healthy for you, that's a given right?!  ;)  So here ya go, enjoy!

What you need:
4 scallions (whites and greens chopped and separate)
4 tbsp of garlic
1 celery stalk (chopped)
2 tbsp EVOO
salt and pepper to taste
1 tsp of ground cumin
1/8 tsp of chili power
1 1/2 cup of chicken broth
2 cans of black beans
1 can of diced tomatos
tbsp of lime juice

What you do:
In a medium saucepan warm the oil and stir in the white parts of the scallion, celery, garlic, salt, pepper, cumin and chili power until veggies are soft.
Then add in the black beans, tomatos and broth.  Bring to a simmer for about 10 minutes.
Once simmering, lower heat and add about 2 cup fulls of the soup mix to a blender (I like to use my Magic Bullet) and blend to a smooth liquid.
Add it back to the rest of the soup mix, splash with the lime juice and sprinke the green chives on top and DONE!
